World Water Day with Lime Wood and Belu
To celebrate World Water Day on the 22nd March and our work with our long-standing partners Belu we thought we would take you on a journey through Lime Wood to see how we support the fantastic work Belu do.

Our Bar Team at Lime Wood know a thing or two about cocktails. Created with summer in mind, the team have muddled together three cocktails with a seasonal twist, made with fresh local ingredients, all thrown together to serve up sunshine in a glass.
Why not recreate them at home?
Mr Fawlty was inspired around a classic gimlet which is typically made from gin and lime cordial with a fresh herbacious twist from the basil. This delicious refreshing cocktail is ideal for summer days and goes great with our Isle of Wight tomato salad and the Laverstoke mozzarella. Created by Lucy Hyndman, Receptionist

What to do:
Firstly, take the handful of basil and give it a hard slap, place this into the shaker tin and then add 50ml Conker Gin, 20ml Lime juice and 10ml of a 2:1 Sugar syrup. Fill the shaker tin up with cubed ice and seal the tin with the other end and give it a hard tap on both ends. Give this a vigorous shake to break the leaves up and cool the drink down. Using a Hawthorne strainer and a tea strainer, strain the drink into a 5oz Nick & Nora glass. Garnish with a basil leaf
We wanted one of our cocktails to include kombucha in but to also keep the cocktail super fresh and ideal to enjoy in the summer. The green tea works perfectly with the elderflower and the New Forest strawberries are truly to die for. This is the perfect cocktail to enjoy with the Panna Cotta and was created by Fabrizio Biscardi, Head Bartender

To make the Strawberry puree, we blend New Forest strawberries and caster sugar in equal weights, so 100g strawberries and 100g sugar, we then pass this through a fine strainer to remove the small pips.
The into a mixing tin add 25ml of the puree, 20ml Bottle Green Elderflower Cordial and 200ml Dry Dragon kombucha. Lightly mix, it may fizz up, this is okay just wait for it to settle.
Pour the drink into your favourite long glass over cubed ice and garnish with those delicious New Forest strawberries left over from making the puree.
Center Court is a clarified milk punch, meaning we split milk to remove tannins and harsh flavours out of the drink but leave a rounded creamy finish. Named after Wimbledon’s famous main court and based around their famous serve Strawberries and cream, this cocktail is perfect alongside a lemon tart and was created by Ben Piercy, Bar Manager

So, this drink is classed as a clarified milk punch and is a little more involved with the preparation but then the serve is super easy and worth the effort.
Firstly. we make the New Forest strawberry puree as with the Strawberry Dragon, we will need 500ml of this. We need to brew 500ml of a Rose, Rosehip and Hibiscus tea.
Into a no reactive container add 500ml puree, 500ml tea, 700ml Black Cow Strawberry Vodka, 100ml Lemon juice and stir. To this we add 450ml full fat milk. This will split and is intended to do so. Leave the mixture for 4hours to allow the milk to remove tannins and soften the drink. Then using a cheese cloth or nut milk bag pass the mixture through, at first it will come out cloudy but will turn clear as it strains. Pass it a second time through the same cloth with the curds in as this acts as an extra filter and will produce a beautifully clear liquid. Bottle it and keep it in the fridge for up to a month to have whenever suits you best.
