Luke’s Simple Pea Pesto

A super simple and seasonal dish, bursting with flavour with fresh peas, zingy lemon, toasted pine nuts and rich parmesan - perfect as a light pasta supper or served as a side.

Luke loves serving his pea pesto with roasted lamb or on toast as a crostini – the choice is yours!

What you’ll need:

250g frozen peas

25g grated parmesan

1 lemon zest and juice

50 – 80ml of extra virgin olive oil

20g roasted pine nuts

What to do:

  1. Start by blending the frozen peas (whilst they are still frozen) until they are roughly chopped. Warning, this can be quite loud!
  2. Add the rest of the ingredients into the mix, use as much or as little olive oil as you would like depending on how wet you would like the pesto to be. Then blend them together once more.
  3. Serve the pesto alongside a pasta dish, as a side or on toast – it really is that simple!
  4. Dig in!
